Project Synopsis

Valorization of fish in healthy and sustainable dietary patterns

The general topic of this research aligns with the global challenge of promoting healthy and sustainable diets. Specifically, the project aims to enhance the nutritional value of seafood products within sustainable dietary patterns tailored to the national context. The nutritional and health-promoting role of fish is fundamental for the general population and it can also be adequately exploited to meet nutritional requirements of target groups with specific needs. In fact, fish is an important source of nutrients such as high-quality proteins, long-chain omega-3 polyunsaturated fatty acids and a range of essential vitamins and minerals, whose needs are often not met. Additionally, fish has a relatively low environmental impact with respect to other animal source foods and fish-based products could be further optimized to improve their nutritional quality. To address this challenge, the development of a research and innovation strategy will be achieved through collaboration with the industry, enabling the practical application of the proposed framework.
