Project Synopsis
Buckwheat processing produce a certain amount of side stream and byproducts materials, that are an excellent source of bioactive compounds and lignocellulose. The aim of this project is to set up a sustainable process for byproduct recovery from buckwheat food processing, limiting the use of chemicals. A sequential approach has been devised by using processes that have a low environmental impact. The first step involves recovery of compounds that can be reused in the composition of new foods or as a functional ingredient, such as polyphenols. The residual lignocellulosic material will be used to recover specific cellulosic fractions, that may have applications in various fields, from packaging to cosmetics, thanks to their mechanical properties, reinforcing capabilities, abundance, low density, and biodegradability.
