Project Synopsis
The project aims to explore and evaluate the nutritional quality and environmental impact of menus within catering systems (e.g., schools, nursing homes) to identify gaps and provide possible solutions. Additionally, the project seeks to optimize these menus to make them healthier and more sustainable, taking into consideration socio-cultural aspects and national consumption patterns. Further along, intervention studies will be developed to assess, among others, acceptability, adoption, and actual food intake. Education strategies will also be defined to promote the adoption of sustainable and healthy dietary patterns in different target groups.
