Research topic: Sustainable chemistry for the preparation of molecules of agri-food interest

 

Project Synopsis

My PhD project is focused on the preparation of polyphenolic compounds, in particular stilbenoids (resveratrol analogues and dimers) and flavonoids (anthocyanidins, chalcons) and their metabolites. The desired compounds will be obtained by synthetic and biocatalytic methodologies and/or by purification procedures from selected raw materials. These molecules will be tested for their activity (antioxidant properties, immunomodulatory functions, etc) in different biological models and for their interactions with the microbiota. Structure-activity relationship studies will be performed in order to understand the modes of action of the active compounds. Moreover, new polyphenol derivatives will be designed, synthetized and evaluated for antibacterial and antifungal activity.
