Multidisciplinary approaches to the study of multi-phase foods as delivery systems for bioactive compounds
Project Synopsis
Global concerns regarding the consumption of animal products and their negative effects on health and the environment have led to significant growth in the field of plant proteins. Several studies report that mushrooms show a good nutritional composition and presence of bioactive compounds beneficial for human health, thus the project will aim to the development and optimisation of foods enriched with bioactive-rich mushrooms (BRMs). After a literature search on the topic, the optimization of BRMs cultivation conditions will be performed and the obtained biomasses will be included in different food products. In particular, BRMs integration will be optimized for milk- and plant-based ice creams and mousses as well as for traditional and gluten-free bread and cookies. DoE techniques will be applied, and the optimization will be performed through RSM. For each product, technological and nutritional characteristics, in vitro digestibility, and sensory aspects will be evaluated.
