Sustainable approaches to reduce degradation processes of fresh food (Ex DM118/2023)
Project Synopsis
The project will focus on the development and engineering of sustainable chemical processes (“green” extractive chemical approaches, enzymatic bioconversions) for the recovery, valorization and production of high added value molecules and biomaterials starting from waste and residues of the agricultural chain. In a circular economy approach, the proposed strategy will aim to the search for active antimicrobial and antioxidant compounds. Waste matrices known for their high content of bioactive molecules (e.g. phenolic compounds, terpenes) will be selected, and extraction processes optimized. The most promising extracts will be fully chemically characterized.
