Sensing technologies for characterization and authentication of food products
Project Synopsis
The project wants to answer the dairy industry needs for an improvement of processes and methods. Thus, the main purpose is to propose and develop a Process Analytical Technology (PAT) approach for specific applications in few production sites. To achieve the project aim, the research will consider two main topics: (1) improvement in dairy production and (2) characterization of dairy products. In both cases, the reliability of sensing techniques, combined with multivariate data analysis, will be verified at laboratory scale, and then scaled up at industrial dimension, passing through pilot plant level. The main sensing techniques applied to monitor and optimize food production processes will be FT-NIR, FT-IR, e-eye, e-tongue and e-nose. The use of PAT and chemometrics tools, such as PCA, PLS and MCR, allows monitoring the process and predict quality variables in real time.
