Probiotics and Food associated microorganisms: ecology, molecular and functional characterization, impact on host health

 

Project Synopsis

The general benefit of probiotics on gut microbiota derives from creating a more favorable gut environment, through mechanisms shared by most probiotics. To this aim the survival through the human gastro-intestinal tract is considered one of the key points of probiotic biomasses. Production process parameters, post-fermentation treatments and cryoprotectants have been widely investigated to access their relevance on microbial biomasses viability and survival, but their role in the robustness of probiotic during the transit along the gastro-intestinal tract was rarely addressed. Therefore, the main goal of my PhD research is the optimization of the fermentation and post-fermentation processes for probiotics production in order to implement their stability and their fitness during the gastro-intestinal tract transit in human subjects.
