Sustainable approaches to reduce degradation processes of fresh food
Project Synopsis
My research activities will focus on the evaluation of natural (GRAS) bioactives as food preservatives to mitigate oxidative and microbiological spoilage in fresh tuna.
In line with circular economy PNRR principles agri-food wastes and residues will be exploited for the recovery and valorization of bioactive components characterized by antioxidant and antimicrobial activities.
Physico-chemical analysis (eg. texture, colorimetric, humidity, HPLC-UV), and microbiological evaluation will be performed in collaboration with other research groups with the aim of identifying the most promising solutions.
