Project Synopsis
The project aims at developing biocoatings for fresh food, in order to enhance food safety, prolong shelf life and reduce food waste. A collection of novel biocoatings will be prepared combining natural food-derived bioactives and biopolimers. Bioactives will be selected by a preliminary evaluation of antioxidant and antimicrobial compounds. Their technological and shelf-life promoting activity performances of biocoatings will be evaluated by means of physico-chemical and microbiological analysis.
