Research topic

Biotechnological processes for the transformation of agri-food residues into value-added molecules

Project Synopsis

The aim of my PhD project is to characterize a group of “non conventional yeasts” with food-industrial properties in order to develop the most promising strains into a “cell-factory”.

Our attention will be first focus on environmental yeast species among which marine yeasts and yeasts isolated from food matrix. During the second part of my project I plan to set up methods in order to obtain interesting molecules to be employed as dietary supplement in the production of functional foods and feeds.
